Chicken & Pepper Quesadillas

Chicken & Pepper Quesadillas
ingredients
2 cups cooked shredded chicken
1 cup frozen bell pepper and onion stir-fry mix
2 tablespoons Food Club Taco Seasoning Mix
4 teaspoons canola oil
4 ct Food Club Low Carb Tortillas
2 cups Food Club Shredded Mexican Style Cheese
1 ct Food Club Squeeze Sour Cream and salsa for serving
1 ct Preparation:
1 ct In a large microwave-safe bowl, combine chicken, bell pepper mix, and taco seasoning. Cover bowl with a paper towel and microwave at high power for 1 to 2 minutes or until the mixture is hot.
1 ct Heat a large nonstick skillet over medium heat. Add a teaspoon of oil to the skillet then add one tortilla. Sprinkle 1/4 cup cheese on one half of the tortilla, then top cheese with 1/2 cup chicken-pepper mixture. Sprinkle chicken with another 1/4 cup cheese, then fold empty half the tortilla over fillings.
1 ct Cook until the bottom of the tortilla is golden brown and crispy. Carefully flip the quesadilla over and cook until the other side is brown and crisp. Remove quesadilla from skillet, cut into wedges and serve with sour cream and salsa. Prepare the remaining quesadillas in the same manner.
