Applesauce Spice Cake

ingredients

1 ct 16.5-ounce box Food Club Spice Deluxe Cake Mix
3 ct eggs
1/3 cup vegetable oil
1 cup Food Club Unsweetened Applesauce
1 teaspoon Food Club Vanilla Extract
1 cup Food Club Pecan Chips
2 ct 8-ounce blocks Food Club Original Cream Cheese, at room temperature
1/2 cup unsalted butter, at room temperature
4 ct 1/2 cups powdered sugar
2 teaspoons Food Club Vanilla Extract
1/2 teaspoon cinnamon

Directions

Preheat oven to 350°F. Grease and flour two 8-inch round cake pans.

In a large mixing bowl, beat the cake mix, eggs, vegetable oil, applesauce and vanilla

extract on medium speed for 2 minutes, until completely combined. Gently stir in the

chopped pecans.

Divide the batter evenly between the cake pans and bake for 30 to 35 minutes, or until a

toothpick inserted in the center comes out clean. Set the pans on a wire cooling rack and

allow the cakes to cool completely.

Using a mixer, beat the cream cheese and butter for 2 minutes, until smooth and creamy.

Add the powdered sugar, vanilla and cinnamon and beat until combined. Place a layer of

cake on a serving plate and spread the frosting evenly over the top. Add the second layer

of cake, and spread the frosting over the top and sides of the cake.
