Avocado and Corn Salsa
ingredients
1 ct 15-oz. can black beans, rinsed and drained
1/2 cup corn kernels, fresh or frozen
4 ct roma tomatoes, seeded and chopped
1 ct jalapeno, seeded and minced
1/3 cup chopped fresh cilantro
1 ct small red onion, diced
1/4 cup lime juice
2 ct Tbsp red wine vinegar
1 tsp. tsp salt
1/2 tsp. tsp pepper
2 ct avocados, diced
Directions
1. Mix black beans, corn, tomatoes, jalapeno pepper, cilantro, red onion, lime juice, vinegar, salt, and black pepper in a bowl; fold avocado into the mixture.
